What is water activity why is it measured?

Water activity is a ratio of partial pressures between a substance and pure water. To put it simply, it is a measurement of ‘available water’ in a substance and it determines the degradability and stability of a product which affects the shelf life directly e.g. Available water can be used by microbes to promote their growth. By taking water activity  (aW) into account during food product R&D, a manufacturer can create a recipe with an extended shelf life. Food safety is of great concern in food manufacturing processes and by measuring water activity of a product as part of quality control, safety standards can be maintained along the production line.
